Bananas Foster

Serves 2.

200g Bananas (2)
35g White sugar
15g Brown sugar
25g Butter, cubed
5g Vanilla paste, or bean (halved)
20g Banana liquor (optional)
100g Black spiced rum.

Making caramel first prevent bananas from breaking apart. Heat up a heavy bottom skillet, cook sugar to light caramel stage. Whisk in butter; gradually. Roast bananas a couple of minutes on each side. Add black rum and flambé. Let sit a couple of minutes to rest. Carefully, transfer roasted fruits onto a serving plate. Reduce the caramel-rum mixute to a sirupy sauce and top bananas with. Scoop out vanilla ice cream and serve immediately. Enjoy!

Vanilla Ice Cream / 1120g.
Crème Anglaise
500g Milk
180g Sugar
30g Corn syrup, or glucose
30g dry milk
8g Vanilla paste or use one vanilla bean* (scrap seeds out)
2g Salt
100g Egg yolks (5)
4g Gelatin sheets
300g Heavy cream.

First, soak gelatin in cold water to soften and drain. In a saucepan, warm up together milk, vanilla, sugar and salt on low heat. Add dry milk and blend using an immersion blender. When mixture reaches 113ºF/45ºC, add egg yolks and blend. Cook to 185ºF/85ºC stirring constantly. Do not boil. Remove custard from the heat, mix in gelatin along with the chilled heavy cream – refrigerate overnight for maturation. Process in your ice cream maker according to manufacture instructions. It should run for about 25 minutes. Transfer ice cream in another frozen container if desired. Freeze an hour prior serving. Or, once ice cream is completely frozen, place in the refrigerator for about an hour to soften and scoop out.

200g Banane (2)
35g Sucre
15g Sucre brun
25g Beurre, en morceaux et froid
5g Pâte de vanille, ou une gousse
20g Liqueur de banane
100g Rhum noir épicé des Caraïbes.

Faire un caramel a sec en premier évitera de casser les bananes et donnera une belle couleur instantanément. Quand le sucre commence a prendre une belle couleur, on va incorporer la vanille, et beurre petit à petit avec un fouet; on évitera ainsi la séparation du gras. Ajouter les bananes et les rôtir 2 minutes sur chaque face, Déglacer avec le rhum, puis flamber. Couper le feu et arroser les bananes. Laisser reposer 2 min – mettre sur assiette et servir aussitôt avec la glace vanille. Régalez-vous!
