Apple Fritter Rings Recipe

Yields ≈ 20 Fritters

4 ea. apple such as golden delicious, granny smith, gala, pink lady, braeburn… or pineaple or firm bananas.
Water and one lemon juice.
1 cup (250ml) blond beer, at room temperature
3 ea. (60g) egg yolks
3 Tbsp (45ml) neutral oil
1.6 cups (250g) all-purpose flour, sifted
1 packet (7g) instant dry yeast
1/2 tsp (3g) salt
1 Tbsp (10g) granulated sugar.
3 ea. (90g) egg whites, at room temp
1 pinch of salt
1/2 tsp cream of tartar or lemon juice.

Frying oil, powdered sugar and cinnamon.

Combine beer, oil and yolks. Add all dry ingredients, mix to combine and let rest for an hour. Meanwhile, peel and cut apples into one-third of an inch (8mm) rings. Core and immerse rings in water and lemon juice. Apples can also be cored before slicing. Beat egg whites with salt and cream of tartar to soft peaks. Fold meringue in batter in two times using a spatula. In a large heavy-bottomed pot or dutch oven, heat frying oil to 375ºF (190ºC). Pat dry fruits on paper towels. Dip apple rings into batter; fry, a few at a time for about 4min on each side or until golden brown. Mix some cinnamon in sugar to taste if desired, for apple rings only). Sprinkle powdered sugar generously on hot fritters . Serve warm – Enjoy!
